Creamy Avocado Toast with Garlic Mushrooms

Ingredients
For the avocado:
- 1 avocado
- 2 tbsp. basil, chopped
- 1 garlic clove, peeled
- 1 tbsp. tahini
- juice of half lemon
- 1 tbsp. olive oil
- 2 tbsp. water
- pinch of salt
For the mushrooms:
- ½ tsp. olive oil
- 8.8 oz. (250g) mushrooms
- 2 tbsp. pine nuts
- 3 garlic cloves, minced
- pinch of salt
- 2 slices bread, toasted
- 1 tbsp. fresh basil leaves, chopped
- pinch of black pepper
- juice of 1 lemon
What you need to do
- Start by placing all the ingredients for the avocado into a blender or food processor. Pulse until they are broken down but still retain a slightly chunky texture.
- Heat a large skillet over medium heat and add the olive oil. Once the oil is warm, toss in the mushrooms, pine nuts, minced garlic and a pinch of salt. Cook for approximately 5-10 minutes until the mushrooms become soft and tender.
- While the mushrooms are cooking, toast the slices of bread until they are lightly browned.
- Once the toast is ready, spoon some of the avocado mixture onto each slice, spreading it evenly with a spoon.
- Top the avocado toast with the cooked mushrooms from the pan, followed by a scattering of fresh basil leaves, a pinch of black pepper and a squeeze of lemon juice.
