Lemon Chia Energy Balls
    Makes 12 balls / 15 Minutes
Ingredients:
- 5.3 oz. (150g) cashews
 - 4.2 oz. (120g) shredded coconut
 - 3 tbsp. maple syrup
 - 2 fl oz. (60ml) lemon juice
 - 2 tbsp. lemon zest
 - 2 tbsp. chia seeds
 
To coat:
- 1.2 oz. (33g) unsweetened desiccated coconut
 
Instructions:
- In a food processor, blend cashews and shredded coconut into a coarse meal.
 - Add maple syrup, lemon juice, and zest. Blend until a sticky dough forms.
 - Add chia seeds and pulse to mix. Adjust texture with more coconut or water as needed.
 - Roll dough into 1-tbsp. balls and coat in desiccated coconut. Chill on parchment. Store in the fridge for up to 1 week.
